The clients challenged us to design a specialty bakery offering all vegan baked goods and fresh juices. The setting was banal, a 70’s strip mall with a large parking lot, but the aspirations were not. The client wanted a transformative space, one that would support their mission of creating healthy food and healthy living in a healthy environment.
The theme of health and natural foods led to ideas of organic growth and natural light. The deep dark space reminded us of inert ground, needing light, air, life. Long linear skylights were designed to introduce natural light over the seating areas. A softly curving ceiling was developed from the skylights, down to the café area (one young customer thought it was like a snow drift).
The one unique feature of the existing space was its corner location in the shopping plaza. We replaced the front with glazing and introduced a new side entry which allowed us to develop a small patio and garden area in support of the bakery’s client’s natural lifestyle.
